Meats, cheeses and accoutrements 4-8 oz total per person, depending on if it is an appetizer or entree portion.
Offer different flavors, I love a rosemary ham, salami, pepperoni, capicola, prosciutto. Not a fan of pork? Don't be afraid to add roast beef, pastrami, chicken or turkey.
Balance flavors with a minimum of three cheeses, maximum of 5-6
Offer one cheese knife per cheese so the flavors don't mix.
When using full wedges, crumble or slice the beginning of the wedge (depending on the type of cheese) so people get the idea on how to eat it.
Provide an assortment of different texture and flavors of crackers and breads. Slice a fresh baguette, crostini, flavored crackers, table water crackers, pita. Traders Joe's Raisin and rosemary or Fig and Olive Crisps are amazing!
Remember people love beautiful food, think colors and textures. Fruits (fresh and dried), vegetables, pickles, olives, nuts, hummus, jams, glazes. Balsamic Glaze is a favorite. Balsamic Pearls are a cool and unique addition.
